Meet the Reset Shot: A Little Bottle of Sauerkraut Brine

Every time I finish a jar of sauerkraut, I look at the brine left at the bottom and think: that's the best part. In Eastern Europe nobody throws it out. You drink it. So I made it into its own little bottle.

Meet the Cabbage Mama Reset Shot.

What's in it

Just one thing: 100% sauerkraut brine, the juice from cabbage, carrots, salt and filtered water. 60mL, raw, unpasteurised, with live cultures, no vinegar, made in Sydney in our commercial kitchen. It's sharp, salty and sour, with a clean cabbage tang and a little natural fizz.

Why you'll love it

  • Reset after a big night. A cold shot the morning after. It's salty, sour and wakes you up.
  • Great after sweaty sessions. Finished a run, a gym class or a hot day at the market? A shot and a glass of water is my go-to.
  • An old family tradition. In Russian and Ukrainian families, a glass of brine the morning after a celebration is how it has always been done. This is that tradition, in a bottle.
  • A sour flavour enhancer. Brine adds tang to anything that needs it. More below.

How to use it

  1. Straight as a shot. Cold from the fridge, in one go. Chase it with water if the sour hits hard.
  2. Splashed into a glass of water. A gentler way in if you're new to it.
  3. In dressings. A splash instead of vinegar or lemon in a salad dressing.
  4. In marinades. Adds tang to chicken, pork or veggies.

Storing it

Keep it refrigerated. Unopened, it keeps for 3 months in the fridge. Once opened, enjoy it within a month. Because it's alive, it may fizz a little, so open it gently.
